I would not go any heavier that 15W nor lighter than 5W so now you need to determine how heavy you are and how stiff you want your bike to ride. 15W is stiff and makes for a rough ride and 5W is too light for 2 heavy people on the bike. Dexron transmission fluid can be used and is just about right for most "average" riding, but, you can use Belray, Castrol, etc. fork oil according to your tastes. It's up to you now.

stock is ATF,same as the shock oil, use synthetic as it will hold up longer

I've never been able to find definite information on what weight ATF is and from research it doesn't even seem to be the same between manufacturers. With so many fork oils on the market these days with known viscosities I like using fork oil of specific weights so I have a true baseline to work from if I want to change the ride characteristics. I've used ATF in the past and had good results too. I bought a brand that was specified for older Honda cars, if it makes a difference I couldn't say for sure.

if you are testing weights of fork oil i would suggest drilling and tapping the cap for 1/8 NPT plugs and before draining oil you could measure the oil depth, drain the fluid and then refill with a newer weight oil to test, may not drain every drop of the old oil each time but i am sure that enough should drain each time to properly evaluate the different oils,
when draining fork oil you will find that changing the settings on the anti-dive may change drain rate

That's a pretty good idea. Ya so many variables, dive settings, progressives, spacers, oil, air pressure, loaded, unloaded, riding style. Just gotta find a combo that feels good and work with it.
